We where able to change the display name, but I agree; it is not very user/admin friendly.
1. Change the display name in Azure AD (just like RV did)
2. remove and re-add the guest user from and to the team
Then we saw the correct display name.
(There was some time between the Azure adjustment and the Teams action, I think one week or so.

For new guest accounts; It seems you have only one shot to change the display name, at the invitation with the teeny-tiny little edit pencil. But must users/owners forget this or don't pay attention to it and come to IT afterwards.. :-(
