Can't the organizer go into the meeting options and switch "Allow Meeting Chat" to disabled?
We have some meeting where we want/need chat to be ongoing. It should be (and might already be, per the meeting options settings) a meeting organizer's choice to allow the chat to continue or not, rather than a unilateral setting.
