I agree. This is an annoying feature. Microsoft doesn't archive email without user consent in Outlook nor hide their folders if unused. Files on the file server don't simply disappear into a hidden or archive folder after a period of time.
Why is this even a thing in Teams? At least make it a user-configurable feature and to Matt's point, don't touch my order either. Sometimes projects belong side by side even if their last used dates, or names don't make it apparent to Microsoft.
I'm so tired of Microsoft making changes that "help" as if they know how each and every user operates. STOP HELPING! All you're doing is creating support tickets for IT teams and confusion among users.
