While you cannot delete the approved request, as an owner, you can go to that date on the Shifts calendar and delete the time off request block from there. Your employee can submit a new request with the changes. This seems like it would have the effect you want as that shift would then be available again. The time off request list is cumbersome anyway. Focus on the calendar and you can edit or delete anything you need to.
