Agreed. Multiple organizers would make many things easier, particularly in team teaching scenarios. It's actually surprising to me how frequently it would be convenient to have more than one teacher able to create breakout rooms.
Also, if you are teaching in Teams in a series, and one teacher is absent one day, then there is no ability for the organizer to be reassigned for ease of use.
