This needs to be a feature. For business and education the organizer should be able to end the meeting chat.

Turning chat off, on a meeting to meeting basis, needs to be an option. This is primarily a factor where this option would be welcomed for external webinar use.

Having the option to Lock Chat after a meeting ends should be an option ... especially for external webinars and/or presentations

When a company or institution pays for Microsoft Teams service that payee should therefore be able to control the point at which the meetings they create end. Having chat room comments continue two weeks after a meeting ends is more often than not illogical and unmanageable. End Meeting should End Access to the Chat Room for the attendees invited. This is the equivalent of inviting family and friends over for the holidays and them never leaving, or being able to randomly enter ones home 24/7/365 with their own key forever more.
