Like in Outlook, if you want to give someone right to your calendar you can share it with them and edit the restrictions. You seem to not be able to do this in Teams.
The great thing about Teams Calendar is that you can keep meetings within channels to not lose chats and files. But if you do not want to be the organizer for this meeting anymore you have no option but to still manage it.
An example - I was an EA to the COO of the company. I changed position and he now has a new EA. Every meeting that I set up for him from my Teams calendar (as I cannot get access to his) I had to either cancel or keep managing. There was no option to switch organizers or pass over the baton to the new EA.
Could there be either one of the two options:
1. Share Calendar options in Teams calendar so EA's can manage diaries in both O365 and Teams
2. Additional Organizer field which gives colleagues the same level permission as you on the meetings you set up within team channels.
