People's calendar available in Chat
I would like to have available a TAB in the CHAT section with the person's calendar and availability (Just like Files, Organisation and Activity)

It would be nice to see along the side of a chat thread. Use case is when you need to contact someone you have an open conversation with but they have a status of 'Busy' or 'DND'. It would be nice to quickly see their calendar view like in Outlook scheduling when they are most likely free so you could pick up the conversation from where you left off.

Definitely.
For example, this information is already available to me in MS Teams when I click on the "Scheduling Assistant" when I create a "Meeting" with the user by clicking the little calendar button at the bottom of the MS Teams chat window.
The idea of having the contact's "Calendar view" tab within the Teams chat window, is to be able to quickly glance where that contact has availability (or find out what they have going on) - all this without having to click through to "create a meeting" when I don't want to.

Or by hovering over their icon and seeing their contact info pop up - if this could have a availability data for the day, with an option to view more.
I often go to chat with someone and they are 'on a call' or 'busy' - it would be great to quickly see their schedule without having to go in to Scheduling assistant
