Inactive Team Policy
Currently, Teams automatically hides Teams which have not been used in more than 45 days (https://www.microsoft.com/microsoft-365/roadmap?filters=&featureid=48621). Be able to create a policy in the TAC or in the client that can both set the number of days to hide inactive Teams (I.e. 7 - 100) and also be able to disable this altogether so inactive Teams are never moved to hidden Teams.

This feature should be able to be disabled. It is moving important teams that will go dormant for long times, but we still need to be notified immediately and not have the Team hidden.
As of this comment, it appears that channels within a Team can also be hidden. Additionally, clicking the ... next to a Team give the option to "Show" that team, however, I am not certain if it is permanent. I can also say that there are teams with no activity for more than 45 days which are not hidden.
Finally, if you click the gear wheel in Teams (next to Join or create a team at the bottom) you can individually select to show any hidden teams. Again, I'm not sure if this is permanent, as I just found this today.
Upvoting this as whilst I'm sure this could be useful if you have teams you want to keep but no longer focus on, there should be the option to stop this happening - some sort of toggle in the settings for automatically hiding teams (or as suggested, also allow a change in the timescales).
It is happening repeatedly to teams that I use on a regular basis, but because they are primarily used for file sharing and not for conversations the activity in them doesn't seem to be logged in teams.
Can't imagine this would be too difficult to implement?

I hate this "feature" it is much more annoying then useful. I have lots of teams and I am constantly needing additional clicks to find my teams.
We at least need an option to turn this off.

You should be able to flag an individual team as "never hide".
And if you get mentioned in a hidden team, it should unhide it.
I had my manager @ mention me in his direct-reports team sometime after it had been autohidden, and i did not know or see it, because the bolded team/channel was hidden=
