Higher contrast font colors, more font size choices
Have the font color selection include fonts with better contrast levels from the background. On the standard white background (don't know about others as my company has disabled themes), colors other than black are extremely hard to read.
As other users have noted, please add more font size choices, particularly for Wiki page titles. They are barely distinguishable from subheadings.
Would be good to have font option that is thicker for use with Teams. The thin font on a light background is difficult to read at times. I have tried the high contrast themes, but do not like the dark settings - and the font is still thin. Thanks
Echoing other's concerns for more vibrant colors - some of these colors are very hard to read in light mode, which many folks still use..

The font size on the active call screen is crazy small. Once I answer a call, the caller ID is in tiny, tiny font. The entire screen is basically blank with the background color. Why is the caller ID in 6 pt. font?
On the light theme, not a single one of the colours meets AA accessibility standards. Now, to be fair, you can switch to the dark or high contrast modes to solve this problem if you have any sight problems - BUT most of them aren't even close to being accessible, and I, with my perfectly good eyesight find it difficult to read some of them, and annoying to read the rest (on light theme).
Below is a table, including the official AA accessibility rating (4.5 required to pass) and my own personal rating from 1-5 where 1 is extremely difficult to read, and 5 is extremely easy to read (on the light theme):

The pastel fonts are too difficult to see, not providing enough contrast when all are spending so much time in front of screens right now. As noted by others, please provide darker color fonts for use in Teams.

The current pale gray on white is a recipe for eye strain. The gray and black theme are equally ******* the eyes. Please consider allowing us to have as much functionality as skype for business had - it worked so well, and the Teams chat is a poor replacement.

When switching from the Default (White) theme to the Dark or HighContrast themes, the font colors have better contrast so are more useful.
However, I prefer working with the White background so the colors don't offer the visual "pop" I am looking for.
If it's a matter of contrast, the color pallet could be translated when switching themes, so that, depending on the background colors, the font colors always provide good contrast.
Example: The green font color is a light green which doesn't contrast well with white background. In any theme that has dark background, keep that color ID as light green, and for light backgrounds (like white), make that color ID into a dark green that provides better contrast.
