Allow for change of background/font colors
Allow us to change fonts or background colors as default grey font on white background makes it really hard to see...

I agree. I would also like the ability to categorise meetings in the calendar and be able to highlight meetings in different colours like I can do in Outlook (bring the theme / colour from the outlook calendar.

Big upvote for this, please allow us more visual control! I have a form of pattern-oriented dyslexia and the current options, including high contrast mode, are very difficult for my neurotype.
If I could choose my own colors and color values it would help a lot. Compare teams to discord's color value pattern and you can see what the big difference is.
Discord goes:
Darkest | Dark | light (where chat happens) | Dark
So it emulates "looking in" - the place I want to focus my eyes is the lightest element, my eyes naturally ignore the darker elements on the outside.
MS Teams is the opposite - making the focal points the darker parts of the ui - so my eyes get distracted and reset to the lighter elements.
There's also a lack of strong visual separation within certain areas like chat listings, so for visual disabilities like mine it all blurs into one messy repeating pattern.

To piggy back on this idea it would be really nice to be able to make the Chat background a different color form the Channel background because I'm finding quite a few of my new users are posting in Channels when they think they are actually posting in Chat. Would be a really nice way to differentiate between the two just visually.

None of the three themes is very usable. The high contrast theme's font is more readable, but the rest of the screen is so busy it hurts my eyes. Need to be able to customize appearance -- seems like more and more of those options are being eliminated by Microsoft with each release of their new products. I miss windows borders/shadows so that you could tell which window was on top of which, and the ability to choose my own colors as well.
