Create different permissions for different group members
In Teams, I have set up a group with 3 channels. I have files saved to specific tabs in each channel and would like for some members of the team who are not active participants to not be able to edit files posted a variety of channels. Can I not give some group members of the team limited permissions rather than a full-fledged read/write permissions?

I agree, just like in SharePoint site when you invite members they should be members with edit/contribute rights, and visitors with read only right. One public Team the default join is as Read Only, they can request access right if needed or the Team owner who receives the invite can grant appropriate permissions upon request to join.
Others have suggested this and I agree that each channel should be a separate document library and channel specific Members Group, and Visitors Group permissions.

My suggestion is to follow what WordPress does, with a hierarchy of permissions:
Admin/Owner - all permissions
Editor - can delete/edit all posts, but cannot makes settings changes
Writer - can write posts but not edit others
User - can view posts and make comments/replies, but cannot write new posts.
