Don't hide channels in the "More channels" dropdown when there is space to display them
If there's only one more channel, it doesn't make sense to hide it behind a "More channels dropdown", you're not saving any space. I've noticed this with a few things in Teams, if there is room to display all of the channels vertically, or very few extra channels, it's bad UX to hide them behind a link.

When there is sufficient space on the screen to show all channels, do NOT collapse the channel list. We love Teams but have just a few teams and channels. It is extremely annoying with all the extra clicks require to switch between channels when there is so much unused screen space in the navigation bar. If its too hard to determine automatically, then at least insert a setting for the team itself, called "Don't collapse channels" which can prevent this behavior.
This issue impedes consolidating Teams in favour of extra Channels, as the Channels are hidden rather than visible like a Team would be.

@Suphatra, Will this ever be fixed? It has been in place for a long time now and is just plain annoying. Many of the team entries have just one extra channel yet the title is kept hidden behind the crazy text of "one more channel". If there is only 1 more channel, then why not display its name. Thus the first time that Teams should condense them is when there are 2 or more channels. As long as your code contains the capability to display "one more channel" then it effectively has a bug. The link with the screenshot says that there is plenty more room, but that is not the problem. Even if there were no more room, Teams should not hide the channel title unnecessarily.

I disagree with this. The channels displayed under "more channels" are the ones that I haven't marked as a favourite, so I don't want to ever see them, regardless of UI space available.
